Favorite Bread Recipes
Cranberry Bread
I haven't been making this
recipe for very long (5 years maybe), But it has turned out to be
a favorite.

2 cups flour

1 cup sugar
-
1 ½ teas. baking powder

½ teas. baking soda
-
½ teas. salt
-
¼ cup butter (or margerine)
-
1 egg
-
1 Tbls. grated orange rind (dried okay)
-
¾ cup orange juice
-
1 ½ cups golden raisins
-
1 ½ cups chopped cranberries
-
1 cup chopped pecans (optional)
Sift together flour, sugar, baking soda, baking powder and salt into a
large bowl.
Cut in butter untilixture is crumbly.
Stir egg with orange juice and orange rind. Then blend mixture
into flour mixture.
Stir just until flour is moistened.
Fold in raisins, cranberries and nuts.
Spoon into greased 9½ x 5¼ inch loaf pans.
Bake at 350° F. for 60 to 75 minutes or until pick inserted in
center comes out clean.
Cool in pans 5 minutes. Then invert onto wire rack. Turn rightside
up. Cool completely.
Store well wrapped, for 24 hours before slicing.
Makes two loaves.

Banana-Chocolate
Tea Bread
I have been making this bread for at least ten years
now, I don't remember where it came from, it may have been on-line someplace.
I use very very ripe bananas, sometimes I freeze them for a couple
of days to get them to turn brown and mushy before using them. I
softer the banana the richer and moister the bread will turn out.

1/2 cup Butter, softened

1 cup Sugar

2 Eggs
-
1 1/2 cups All purpose flour
-
2 Tbls Cocoa
-
1 teas. Baking soda
-
1 teas. Salt
-
1/2 teas. Cinnamon
-
1 teas. Vanilla
-
1 cup Mashed banana
-
1/2 cup Commercial sour cream
-
1/2 cup Walnuts, Chopped (optional)
-
1/3 cup Miniature semi-sweet chocolate morsels
Cream Butter; gradually add sugar, beating until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Add vanilla.
Combine flour, cocoa, soda, salt and cinnamon; sift together.
Stir flour mixture into egg mixture, blending well;
Stir in Banana, sour cream, walnuts ans chocolate morsels.
Spoon batter into two greased and floured 7 1/2 x 3 x 2 inch loaf pans.
Bake at 350 degrees F. for 55 minutes or until wooden pick (or knife)
inserted in the
middle comes out clean.
Cool in pans for 10 minutes; remove from pans and cool completely on
a wire rack.
Makes 2 loaves,
Note: this bread freezes well. (wrap airtight)

Italian Bread
For a 1 lb. loaf.

7/8 cup water
-
1 teas. sugar
-
¼ teas. salt
-
2 cups bread flour
-
1 ½ teas. yeast
Put all ingredients in bread machine pan per machine instructions.
Use white bread setting.

Onion Poppy Seed Bread
For a 1 lb. loaf:

½ cup water
-
1 Tbls. butter or margarine
-
1/3 cup chopped onion
-
½ teas. salt
-
1 teas. sugar
-
1 Tbls. poppy seeds
-
1 cup whole wheat flour
-
1 cup bread flour
-
1 teas. yeast
Put all ingredients into bread machine pan per machine instructions.
Setting: wheat.

Pepperoni Cheese Bread
For a 1-lb. loaf:

¾ cup water
-
2 cups bread flour
-
1/3 cup mozzarella cheese
-
1 Tbls. sugar
-
1 teas. garlic salt
-
1 teas. dried oregano
-
1 ½ teas. yeast
Mix-ins:
Put all ingredients except mix-ins into bread machine pan per machine instructions.
At beep or after 15 minutes of kneading, add mix-ins.
Setting: white.
Do not use a delay setting for this recipe.

Pumpkin Bread
This recipe was hand written on the back cover of
a Cranberry-Holiday cookbook that belongs to my mother. I have no
idea where it came from, but the bread has become a winter holiday staple
at our house.
In a large bowl combine:

4 eggs
-
1 cup oil
-
1 can pumpkin or 1 quart pumpkin
-
(4 cups = 1 qt = 32oz)
-
3 cups sugar
Mix well.
Sift together:

3 ½ cups flour
-
2 teas. baking soda
-
1 ½ teas. salt
-
1 teas. cinnamon
-
1 teas. nutmeg
-
¼ teas. ground cloves
Mix dry ingredients into wet ingredients.
Optional:
Add: 1 cup raisins
1 cup chopped
walnuts
Pour into greased bread pans or coffee cans.
Bake at 350º F. for 1 hour or until a pick inserted in center
comes out clean.
Makes 4 loaves.
Note: This recipe can be halved

Zucchini Bread
I found this recipe tucked in an old cookbook I
bought at a yard sale. It was a yellowed, torn up piece of a newspaper
column. It turned out to be a very tasty bread.
3 eggs, slightly beaten
1 cup salad oil
1 cup sugar
2 cups zucchini, grated and drained
2 teas. vanilla
2 ½ cups flour
1 teas. baking powder
1 teas. baking soda
3 teas. cinnamon
1 teas. salt
2/3 cup raisins
1 cup nuts (walnuts), chopped (optional)
Mix first 5 ingredients.
Sift together dry ingredients; combine with zucchini mixture.
Add raisins and/or nuts.
Spoon into 2 greased and floured bread pans.
Bake at 350° F. for 1 hour or until pick inserted in center comes
out clean.
Cool in pans for 10 minutes.
Substitutions: ½ cup coarse bran for ½ cup flour.
Pecans for walnuts.
